Niji Restuaurant and Bar The Wet Sting

Double Bay’s newest Japanese restaurant Niji Restaurant and Bar joins us today with this unusual palate cleansing cocktail named “The Wet Sting”. While the menu is Japanese infused with traditional Japanese Izakaya dishes , they’ve added Western ingredients to create a modern edge to the culinary delights.

The ‘Niji’ translation means “rainbow” and each dish, right down to the cocktails stays true to this – a feast for not only your tastebuds but also your eyes!

“The Wet Sting” is a delicately balanced cocktail, bringing together chilli, kaffir leaves and ginger with honey. A perfect starter to your feast!

Ingredients

  • 45ml Ilegal Mezcal
  • 15ml Choya Umeshu
  • 10ml Maraschino liquor
  • 15ml Sugar Syrup
  • 15ml Homemade ginger, kaffir leafs, honey syrup
  • 15ml yuzu juice

Method

  • Combine ingredients in cocktail shaker
  • Pour into glass
  • Garnish with dry chilli strings & amarena cherry
  • Spoon plum & aromatic honey on top
