This is a variation on the classic Gin Fizz which first originate in New Orleans. This version, with rosemary and honey, adds a fresh and exciting twist to it. Add to that the fact that I am a big fan of Hendrick’s Gin (I’ve never been able to go back to normal gin since I first tried it) and seeing Hendrick’s is infused with rose petal and cucumber it adds even more flavour to this enjoyable cocktail.

Ingredients:

–       50ml Gin

–       90ml Soda Water

–       2 x 1 inch sprigs fresh rosemary

–       ½ teaspoon honey

–       1 small lemon, juiced

–       Ice

Method:

1. Muddle the rosemary, lemon juice and honey in a highball glass

2. Fill the glass with ice cubes

3. Pour in the Gin

4. Top with soda water

5. Stir to combine

6. Cheers !!
