An event at Crown is always going to be special. It’s renowned for hosting soirees of both magnitude and importance, not to mention being at the forefront of cuisine in Melbourne. So it was a pleasure to be invited to the launch of Crown’s partnership with internationally-recognised chefs Neil Perry and Guillaume Brahimi, as they commence their appointment as its Culinary Directors.

In this newly formed role, Perry and Brahimi will combine their expertise to influence all menus across Crown Hotels and Events and Conferencing, producing a premium banquet menu, revamping Crown’s room service options, providing guidance and training at Crown’s Culinarium and continuing to oversee Crown Resort’s world class food and beverage offerings. If you have been thinking about holding your wedding at Crown – there is no time like the present!

The evening was a feast of food, flavours and fun – with a surprise guest performance by the always entertaining Darren Percival. The menu was extensive, with offerings from each Chef for 5 courses, all with matched wines. To say that I was unable to finish the decadent desert had Ms Polka gasping – but it just proved too much to enjoy!

First Entree:

King salmon sashimi with lemon, fennel, apple, wasabi emulsion

Second Entree:

– Seared scallops with cauliflower, spinach, shiitake and a balsamic reduction

Take it from me: food is one of the most important things to me when planning or attending an event. If you are similar, than the opportunity to have these two extraordinary chefs create the menu for your big day is almost too good to miss.
