Boozy popsicles you say?! Yes indeedy! I have managed to squeeze a favourite summer tipple into ice block form just for you.

These popsicles are perfect on arrival at your wedding reception or yummy at a day-after brunch. Just remember to have a non-alcoholic version on hand for the kiddies.

What You Need:

1 1/2 cups dry ginger ale

1/2 cup Pimms No 1.

2 tablespoons caster sugar

6 mint leaves

6 thin cucumber slices

6 thin strawberry slices

2 thin orange slices, quartered

6 popsicle moulds

Method:

Combine the ginger ale, Pimms and sugar in a medium saucepan over high heat. Stir to dissolve the sugar. Bring to the boil, cook for one minute. Remove from the heat and set aside to cool. For a non-alcoholic version, swap the Pimms for more ginger ale.

Divide the mint, cucumber, strawberry and orange slices between 6 x 1/2 cup capacity popsicle moulds. Pour over the cooled ginger ale mixture. Cover with foil and poke popsicle sticks through. The foil will hold the sticks in place until the mixture freezes.

Freeze overnight. Run the moulds under lukewarm water to unmould.

Makes 6 popsicles.
