If there is a time for pink cocktails – it’s a wedding, a bridal shower and Summer! And this pretty in pink ‘Elderflower Citrus Vanilla Fizz’ cocktail has just the right blend of citrus and herbs to make it your new favourite! Perfect as our final cocktail for Ginuary, the patterned people wanted to create a cocktail that was all the things we adore and with a subtle touch of vanilla, this special cocktail surprised us!
- 60 ml gin
- 25 ml elderflower liqueur
- 30 ml pink grapefruit juice
- 15 ml lemon juice
- 10 ml sparkling water
- 5 ml vanilla bean & thyme infused sugar syrup
- Fresh thyme
To make the vanilla bean sugar syrup, combine one cup sugar and one cup water in a saucepan and add 1/2 teaspoon vanilla bean paste and a few sprigs of fresh thyme. Bring mixture to the boil and stir constantly until the sugar dissolves (3-5 minutes). Let cool with thyme sprig and for extra flavour add additional vanilla bean pods.
Combine all ingredients in a cocktail shaker and pour over ice into low ball glasses.
Garnish with fresh thyme sprigs.
