When it comes to what to eat for breakfast on your wedding day, it might not be a choice you have considered yet. Completely understandable as there are far more pressing decisions to be made (Hello, dress! Flowers!) However, a well planned wedding-day breakfast can be essential to the overall flow of the day. Nobody wants a hangry bride or bridesmaid! These individual bircher mueslis with maple granola crumb are the perfect combination – light, fresh, substantial and most importantly – delicious. They can be easily prepared a few days ahead of time and whipped out on the morning of the big day to enjoy with a cup of green tea beside your favourite people as you prepare for the day ahead.

Makes 4. Multiply as necessary. Can be made 2-3 days in advance. 

Ingredients:

For the Bircher Muesli
3 cups rolled oats
2 x Granny Smith apples
1/2 Orange
3/4 cup pear juice
1 cup natural Greek yoghurt

For the Maple Granola Crumb
1/4 cup pepitas
1/4 cup sunflower kernels
1/4 cup almonds, chopped roughly
1/4 cup rolled oats
1/4 cup coconut flakes
1 tablespoon butter, melted
1 tablespoon maple syrup

To Serve
Fresh blueberries, strawberries and raspberries
1 cup natural Greek yoghurt
Maple syrup


Method:

Step One. Grate or julienne the Granny Smith apples.  Squeeze the orange juice over and toss to coat.

Step Two. In a medium sized bowl, place the oats.  Add the pear juice, grated apple and yoghurt and stir well to combine.  Carefully spoon into 4 x glasses and cover with cling film.  Refrigerate overnight.

Step Three. To make to crumb, preheat oven to 190 degrees Celsius. Mix all ingredients in a medium sized bowl.  Line a 20 x 30 baking tray with baking paper. Spread granola mix onto baking tray and place in oven.  After 10 minutes, stir granola mix with a spoon and re-spread over tray. Return to oven for a further 5 minutes. Remove from oven and allow to cool completely.

Step Four. To build the bircher mueslis, add a few spoonfuls of natural yoghurt on top of the bircher muesli mix. Top with a handful of mixed fresh berries.

Step Five. Just before serving, top the individual bircher mueslis with the Maple Granola Crumb and drizzle with a tiny amount of maple syrup. Enjoy!
