Every Aussie has enjoyed one of our national desserts, lamingtons, before but have you ever tried a delicious cocktail interpretation? From the moment your lips hit the chocolatey-coconut rim, you know you’re in for a treat! Make it at home today using the recipe below or if you happen to be in St Kilda to celebrate Australia Day, pop by the Grosvenor and have them whip it up for you.

The Grosvenor Hotel’s Lamington Cocktail

Ingredients:

  • 30ml Chambord
  • 45ml Malibu
  • 30ml coconut puree
  • 45ml Organic cola
Method:
  • Chocolate topping: Rim the glass with chocolate topping and desiccated coconut.
  • Add all ingredients together and blitz with a shallow scoop of ice.
  • Pour the cocktail into glass and garnish with a griottine.
