For me, there is nothing more tropical luxury than  the idea of sitting in the sun, with sandy feet and a creamy, fruit cocktail and this mango cooler? My goodness does it tick all the boxes! It’s pure dessert, for starters, but it has plenty of fruit flavour to kick your mind into thinking it’s practically a health food. Served best in the biggest glass you can find, with paper umbrellas for tropical vibes at your beachside wedding!

Ingredients

4 Ice cubes

20ml lime juice

60ml rum

60ml coconut milk or cream

One cup of mango sorbet

Toasted coconut shreds

Method

In a blender, combine the ice, lime juice, rum, coconut milk and sorbet and blend until well combined and the ice is crushed

Pour into a big glass

Top with toasted coconut and a paper umbrella.
