If there ever was a drink that screams summer (and more aptly, the Whitsundays!) to me, it’s the classic mojito. It’s tall, icy and full of mint and lime, so just about checks every box for a poolside treat. So today? We’re sharing our classic mojito recipe that is the perfect drink to mix up to bring Summer to your wedding day. I love to add extra lime juice for extra tang to mine, but you can leave this out!

Ingredients

8 fresh mint leaves

One lime

20ml Simple Syrup (you can alternatively use two teaspoons of fine or brown sugar)

20ml lime juice

Crushed ice

50ml of rum

Soda water

Method:

Cut your lime into four to eight wedges

Smack your mint to release the oils

Add the fresh mint, lime juice and lime to a highball glass, along with 20ml of simple syrup (or your fine sugar)

Muddle together well

Add ice and rum to the glass and stir

Top with soda water
Garnish with a sprig of mint
