The festive season always calls for yummy treats! Whether you need inexpensive presents for your co-workers or to take a hostess gift along to one of your many Christmas get-togethers, finding a homemade gift that is simple to create is a godsend at this time of year.

This recipe for white chocolate, pistachio and cranberry rocky road is super easy; no-fuss at all! And the finished product is something so delicious that those on the receiving end will inevitably end up asking you for the recipe (believe me!). The white chocolate mixed with the red of the cranberry, the green of the pistachio and the white of the macadamia just shouts ‘Christmas’ in all the best ways.  So pop on some Christmas carols, don a festive apron and discover why this is my go-to Christmas recipe, every single year.

What you’ll need:
Makes approximately 24 pieces 

400g white chocolate
100g macadamia nuts
100g pistachios (shelled)
100g dried cranberries

1 x small lamington baking pan (approximately 23cm x 13cm)
Cellophane bags, ribbon and gift tags for packaging

What to do:

Step 1. Line the pan with baking paper and set aside. Chop the macadamia nuts in half and roughly chop the dried cranberries. Place together with the pistachios in a bowl and mix evenly.
Step 2. Using a heatproof bowl over a saucepan of simmering water, break the chocolate into squares and gently melt, stirring constantly until silky and runny.
Step 3. Pour the melted chocolate over the nut and cranberry mix.  Work fast and mix thoroughly.

Step 4. Pour the combined chocolate, nut and cranberry mixture into the prepared pan and spread evenly. Leave to cool for 30 minutes before setting in the fridge for at least three hours.
Step 5. Using a large sharp knife, cut the rocky road into thumb sized pieces.

Step 6. Place four to five pieces in a cellophane bag. Tie with ribbon and attach a gift tag.

Hints & Tips

  • You can mix up the ingredients however you desire.  A good rule to stick to is maintaining the chocolate-to-topping ratio at 4:3.  Dark chocolate works well with roasted almonds and coconut.
  • The rocky road will keep well in an air tight container in the fridge for up to a month (trust me, it will never last this long!)
  • Get creative with your packaging! Try using metallic accents, bright ribbons or jute twine depending on your aesthetic.  Use the gift tags to write a personalised message.
