Coconut water, the drink du jour, is so much better fresh from a young coconut, and spiced with coconut rum and pineapple juice it brings a taste of the tropics. The Grand Watson comes to us courtesy of Watsons Bay Hotel, and what better place to have this cocktail, on their Top Deck, right on the water watching a sunset as the boats bob along. Then again, for those of us who are in more humble surrounds on Friday, we can make this cocktail and dream. Who really needs to be on a tropical island!

Ingredients:
30ml Coconut Rum
30ml Pineapple Juice
A dash of Honey
15ml Fresh Lemon Juice
Young Coconut

1.       Pour out 3/4’s of the Coconut Water from a young fresh coconut
2.       Mix Coconut Rum, Pineapple Juice, Honey and Lemon Juice in a cocktail shaker
3.       Pour into the young coconut and garnish with an umbrella
