There’s a good chance you’ve heard of Australia’s favourite nutritionist and TV personality, Lola Berry! We are so excited right now at the Polka Dot HQ because Lola’s eighth book launches today, Beauty Food by Lola Berry, and she has shared one of her sexiest recipes with us to celebrate the launch. Tune into Polka Dot Made for the next three weeks for three more of her brilliant recipes that will make you feel beautiful from the inside out!

Oysters three ways

Lola says, “Oysters are one of the best food sources of zinc, which we need for so many functions in the body, but zinc is also a key player when it comes to skin, hair and nail health. Here are some simple ways to jazz them up.”

Oysters taste great with a glass of Champagne, so we’re loving this recipe for a simple yet elegant bite for a wedding or engagement party. Or want to show your honey that you really care? Why not buy fresh oysters and enjoy a special date night at home together!

Ingredients

24 oysters

Natural

lemon wedges, to serve

Chilli and lime

zest and juice of 1 lime
1⁄3 cup (80 ml) apple cider

vinegar

2 tablespoons extra-virgin olive oil

1 tablespoon coconut sugar

1 chilli, nely chopped (remove the pith and seeds if you don’t want it too hot)

6 coriander leaves, finely sliced

Vinaigrette

2 tablespoons white wine vinegar

2 tablespoons red wine vinegar

1 spring onion, very nely sliced

pinch of salt flakes

Method

For natural, just serve the oysters with a few wedges of fresh lemon (this is actually my favourite way to eat oysters, especially when they’re super fresh).

For the chilli and lime combo, all you have to do is mix the ingredients together in a small bowl until the sugar dissolves, then serve them with a teaspoon so you can spoon the dressing over the top of each oyster before eating. The same goes for the vinaigrette – mix everything together well in a bowl, then use a teaspoon to drizzle the dressing over the oyster before slurping it down!
