The gimlet is a classy little cocktail made of gin and lime juice. A 1928 description of the drink was: “gin, a spot of lime, and soda.” It’s an incredibly easy drink to make – just a few ingredients shaken together and you’re on your way. We love how Rockpool’s event spaces, Alfred Place and The Rock Rooms, serve their gimlet with a lemongrass straw for an extra kick of flavour and fun.

Recipe

45ml vodka

20ml fresh lime juice

20ml spiced lime cordial (infuse lime cordial with lemongrass, kaffir lime leaves and red chillis)

1 kaffir lime leaf

Method

Shake and strain into a rocks glass with ice.
Garnish with a lemongrass straw.
