Summer catering can be difficult; what do you serve on a hot summer evening!? It’s tricky because you don’t want to serve anything too heavy, however you also don’t want to serve just another boring salad. Don’t despair though, our lovely friends at Fred & Ginger Catering have a wonderful, tasty and fresh appetiser to solve all your summer catering woes.

Watermelon, yellow plum tomato, mint salad, chilli salt (gf, vegan)

Ingredients 

Half a watermelon
Yellow plum tomatoes, halved
Freshly picked mint leaves
Chilli flakes and ground pink salt mixed together

Wooden skewers

Method

Slice watermelon into small triangles, easy enough to pick up and eat in two bites.

Place a mint leaf in the middle of the watermelon.
Pop the yellow plum tomato half on top of mint.
Skewer with your wooden skewer.

Sprinkle with chilli salt, it is delicious!
